How to Make Ordinary Stir-fried Eggplant

Stir-fried Eggplant Eggplant Originally, I planned to use two small eggplants, but one was spoiled, so I used only one. It turned out to be just enough for the two of us.

Ordinary Stir-fried Eggplant Preparation Method
1. Slice the garlic and prepare some.

2. Peel the eggplant, cut it into dice.

3. Cut the green pepper in half lengthwise and then slice it.

4. Chop the tomatoes into small pieces.

5. Slice the pork; I don't like fatty meat much, so the pork is relatively lean.

6. Fry the eggplant until it absorbs oil well.

7. Drain the fried eggplant and set it aside.

8. Use the remaining oil from frying the eggplant or add more oil to sauté the pork slices until cooked, then remove them.

9. Add a small amount of oil to the pan, add the and garlic slices, stir-fry until fragrant.

10. Add the tomatoes and stir-fry until they turn into juice.

11. Add the green peppers and continue stir-frying.

12. Add the pork slices and fried eggplant, stir-fry until almost done. Season with an appropriate amount of salt, and a little bit of soysauce is sufficient.

13. A delicious stir-fried eggplant dish is ready.
