What is dry tofu and a brief introduction to its production method

Dried tofu Tofu This is Northeast-specific tofu, so it’s also called “Northeast dried tofu.”The appearance of dried tofu is similar to that of southern Tofu skin and thousand-layer tofu. The nutritional components are the same, but the production methods and textures differ significantly. It is thin and firm.

In fact, you can understand it this way: dried tofu is another form of tofu skin or thousand-layer tofu. The differences between them mainly lie in the differences in thickness, water content, and texture. Tofu skin cut into strips is also called tofu strips, just like tofu skin and thousand-layer tofu.
The initial steps for making dried tofu are the same as making tofu, which all require first making tofu soup. Then, after separating the tofu soup from the water, you can make dried tofu. The wooden frame for dried tofu should be the same width as the package, about one meter long, and about half a meter or one meter high. First, place the rolled dried tofu package in the wooden frame in layers. Break up the tofu soup into small, even pieces. Use a ladle to scoop up some tofu soup and gently pour it onto the tofu package, ensuring it’s evenly distributed and not too thin.
After that, add another layer of tofu package, covering the tofu soup you just poured. This also prepares for pouring another layer of tofu soup.
Repeat the above process, pouring another layer of tofu soup and covering it with a tofu package. Continue like this, repeating until the wooden frame for dried tofu is full. This is authentic Northeast dried tofu.

At this point, you need to press it.
First, place a thick wooden board on top, then place some large stones on top. Then, place a long, thick wooden beam horizontally on top of the wooden board, securing one end and using a rope to tie the other end to the horizontal beam on the other side. Use a small wooden stick to tie the rope, constantly moving it to continuously press the upper wooden beam downwards.
The bottom of the wooden frame is filled with water, and the tofu soup is under pressure inside the tofu package, gradually turning into dried tofu. After pressing for several hours, open the tofu package. You will find one dried tofu sheet, and then take them out one by one, stack them, and the dried tofu is finished.
Press for several hours, open the tofu package, and you'll find one dry tofu sheet inside.
