How to Make Chicken and Yam Stew

How to Make Mountain Yam Stewed Chicken:
1. Farm-raised chicken, less than one year old, cut into pieces.

2. Boil water in a pot. After the water boils, blanch the chicken pieces for 2 minutes, remove, and rinse under cold water. This removes blood and water, resulting in a clearer soup.

3. Wash and soak the Gastrodia Tuber.

4. Slice the ginger, and don't chop the green onions, instead, finely chop them.

5. Place the chicken and Gastrodia Tuber, ginger slices, and chopped green onions in a bowl, add 1 teaspoon of rice wine and an appropriate amount of water, and place the bowl in a pressure cooker.Steam for 20 minutes.

6.Steam the chicken when you prepare other ingredients: Peel, wash, and cut the mountain yam into chunks;Chop the green onions;Wash the dates and wolfberries.

7. After 20 minutes, open the pot and add the mountain yam and dates, and steam for another 10 minutes.

8. Remove the chopped green onions and discard, sprinkle with wolfberries and salt, stir, cover, and steam for 2 minutes.

9. Finally, sprinkle with chopped green onions and serve.

10. Show the finished product.

Tips:
The age and tenderness of the chicken, as well as the tools used, determine the cooking time. I used farm-raised, free-range baby chickens, and cooked them in a pressure cooker, so they cannot be cooked for too long.
Do not put the mountain yam and chicken in the pot at the same time. First, steam the chicken for 20 minutes, then add the chicken pieces and steam for 10 minutes. If you steam them for too long, they will become mushy and not taste good.
Gastrodia Tuber is difficult to cook and soften, so it is not recommended to cook it with the chicken.
