Steps for making sesame paste mantou:
1. Prepare ingredients: mix sugar and yeast with about 35°C warm water, let it sit for five minutes.

2. Gradually add the yeast water to the flour while stirring until a large dough forms without dry patches.

3. Knead the dough into a smooth ball and cover with plastic wrap, letting it rise in a warm place.

4. Mix salt with two tablespoons of flour and sesame sauce; adding some flour prevents the sesame sauce from flowing.

5. Once the dough has doubled in size and does not spring back when poked, it is ready.

6. Knead the dough on a clean surface until smooth. Ensure there are no large air bubbles inside

7. Roll out the dough thinly.

8. Spread the sesame sauce mixture on one side of the thin dough and roll up from that edge.

9. Cut into equal portions.

10. Stack two pieces together.

11. Press down with a chopstick in the middle.

12. Stretch out both ends slightly, placing them over the chopstick.

13. Seal the edges and turn the dough clockwise around the chopstick to press the bottom tight; remove the chopstick.

14. Repeat for all pieces, covering with a wet cloth for secondary fermentation.

15. Once noticeably larger, steam.Steam it. Place the steamer in boiling water and steam for twenty minutes, then let it sit for three more minutes.
