Regardless of which type, there may still be a slight fishy smell. A trick is to use salt and baking soda for rubbing before marinating, which greatly reduces the fishiness. This process also makes the shrimp crisper and more transparent when stir-fried or used as filling. Salt and baking soda can be used to rub the shrimp to remove the fishy smell, then rinse with water before marinating. Moreover, such treated shrimp will be crispy and translucent whether stir-fried or made into filling.
