Homemade Recipe for Thousand Layer Crispy Pastry

Layered does not mean it has a thousand layers; it means distinct layers stacked one upon another. Crispy, that is indeed the case.Peanuts,toasted mung beans and chopped green onions mixed with oil to make a crisp filling, truly fragrant. After frying and baking, it forms an outer layer that's crispy on the outside and soft and chewy on the inside; every bite evokes thoughts of what remains in the pan. Eating these small buns is best with a bowl of porridge.

Enjoying these crispy layer buns requires
1. Place flour in the mixer and gradually add warm water.
Once the dough is formed, add a little oil, knead until smooth, then let it rest for 30 minutes.
2. While the dough rests, prepare the filling. The ingredients needed are: toasted soybean residue, crushed peanuts, chopped green onions, salt, and oil.
Note that the crushed peanuts should be made by roasting the peanuts until fragrant and then crushing them.

3. Mix all filling ingredients well and set aside.
4. Take the rested dough out of the mixer and knead it again on the work surface to ensure smoothness.
Roll the dough into a large sheet, spread the filling evenly, and divide it into four sections.

5. Fold each section.
6. Stack these four folds together and roll them out again.

7. Preheat an electric griddle on both sides and brush with a little oil.
Place the dough in the pan and lightly sprinkle water around it, cover, and cook over medium heat for about 7 minutes.
8. Flip and fry the other side until golden brown. Note: The electric griddle has separate upper and lower heating elements, but the bottom flame is often weaker; thus, you should flip the dough and lightly fry it on that side as well.


Tips
1. Using warm water for kneading and sprinkling water around the edges during frying both contribute to a crispy exterior with a soft interior.2. You can also roll out the dough into large sheets, then fold them; this will give you similar texture but won't have as distinct layers. 3. Using
lard
will make it even crispier and more fragrant.4. The dough should be slightly softer to prevent it from becoming dry and hard. In other words, a bit more water may need to be added during kneading.
