Homeemade Shaanxi Zijuan Recipe

The delicacies that haunt my dreams, from snacks to large dishes, but I've always struggled to master them. Wrapping the filling is one thing, but rolling out the dough is a real skill. My mom demonstrated it countless times, but without any machinery, I just can't get the hang of it. Fortunately, when I want some, all I have to do is step on the gas and head straight home.
Zizuan is how Shaanxi people call this snack; Zizuan could also be written as Zi or Zhi. It's a traditional family-style snack in Shaanxi province where the vegetable layers are wrapped into rolls, resulting in a harmonious blend of flavors with soft noodles and fragrant vegetables. Ingredients:

How to make Sichuan Zizuan
1. Mix the flour in a mixing bowl; add water little by little while stirring into dough-like consistency with your hand.

2. Knead the dough until smooth, then cover and let it rest.
3. While waiting for the dough to rise, prepare the filling: boil water in a pot, cook the potato strips until soft, drain them.
4. Clean and wash the celery thoroughly; dry it off.

5. Chop the celery into small pieces.
6. Cut the potato strips into small pieces.
7. Sauté ginger ginger in hot oil, add meat filling and stir-fry.

8. Add the potato strips and stir-fry until cooked.
9. Then add chopped celery and turn off heat, mix well.
10. After the dough has risen, knead it smoothly.

11. Roll out the dough into thin sheets.
12. Mix the chopped celery with five-spice powder, salt, and MSG.
13. Evenly spread a layer of seasoned celery on the sheet.

14. Make a hole in the center of the sheet, then roll it up from all sides.15. It will form a closed ring when rolled. Be sure to roll slowly and carefully so as not to break it.
16. Use a knife to cut the ring-shaped vegetable rolls into sections according to your pot size and place them on a steaming rack with wet cloth.17. Place the steamer in boiling water, steam for 15 minutes.
18. Once done, slice the portions and serve on a plate.
