Steps to make red velvet cake:
Prepare all the required materials.

Find two clean bowls, making sure they are free of water and oil,and separate the egg yolks from the whites. Make sure no yolk gets into the white bowl; the yolk's fat affects the foaming. Beat the egg yolks until well mixed, then add corn oil and

milk and mix thoroughly. Sift in low-gluten flour.

Add red food coloring to the yolk mixture and stir evenly using a spatula,

creating smooth batter without lumps.

Add a few drops of

lemon juice to the egg whites bowl. Gradually add sugar in three portions while beating with an electric mixer until stiff peaks form; lift the beaters to check if the whites can hold a peak that doesn't collapse.

After achieving dry peaks, do not continue mixing.

9.Take one-third of the beaten egg whites and gently fold them into the yolk mixture using a spatula, similarly to stir-frying; avoid circular motions to prevent overmixing.

Fold the combined mixture back into the remaining whites, ensuring it is well incorporated but still smooth with a slight sheen.

Pour the batter onto a baking tray lined with parchment paper and spread it evenly using a spatula. Tap lightly to remove air bubbles.

Bake in a preheated

at 160°C for about 45 minutes or until done.Remove the cake once baked, turn it out onto a cooling rack, and peel off the parchment paper while still hot. Mascarpone cream, with 20g of granulated sugar, is whipped to form soft peaks.

Cut the cake edges away and cut the remaining cake into three rectangular slices, then divide them into square pieces.

Apply a thin layer of mascarpone cream to one piece of cake,
