Sour Soy Sauce Steamed Clam Ingredients: 500g of clams,miso ginger, garlic, fresh red pepper,onion, cassia bark, star anise, fish sauce, salt,soy sauce, black pepper powder, sweet wine juice, rice wine,aged vinegar,,1. Fresh clams, scrub the shells clean with a brush, soak in salty water for 20 minutes, then drain and set aside. 2. Chop ginger and garlic into fine pieces, slice fresh red peppers into small circles, mix sweet wine juice and rice wine in a 2:1 ratio to make the sauce.3. Heat oil in a pot, fry half of the chopped ginger and garlic and some of the sliced red pepper over low heat until fragrant.4. Add a bowl of water, then add star anise and cassia bark, simmer for 10 minutes.

5. Add the sauce, fish sauce, aged vinegar, and the rest of the sliced red peppers, bring to a boil, then add clams and simmer for about 4-5 minutes. Season with salt, soy sauce, black pepper powder before serving, garnish with chopped onions.

1 Fresh clams, clean the shells with a small brush and soak them in salt water for twenty minutes, then drain and set aside.

2 Cut the ginger and garlic into fine pieces, and slice the fresh red pepper into small circles. Mix rice wine juice and white spirit in a 2:1 ratio to form the sauce.

3 Heat oil in a pot over low heat, and stir-fry the ginger and garlic pieces and half of the red pepper circles until fragrant.

4 Add about a cup of water, then add star anise and cinnamon, bring it to a boil, and simmer for ten minutes on low heat.

5 Add the sauce, fish sauce, aged vinegar, and the remaining red pepper circles, bring it back to a boil, then add the clams and cook for four to five minutes. Season with salt, soy sauce, and black pepper before serving, garnish with chopped green onions.
