Sweet Skin Duck Recipe Video


Sweet Skin Duck ingredients:Duck 1 whole (about 1500 grams), raw Ginger and large onion,fine salt and corn syrup, rock sugar (honey), rice wine,cumin,star anise, cinnamon bark, fennel seeds, safflower buds, cardamom, grains of paradise, sand ginger, licorice root, chicken stock, and cooked vegetable oil in appropriate amounts.
Sweet Skin Duck preparation:
1. After slaughtering the duck, remove all hair, make a 6 cm cut at the tail end, extract the innards, wash thoroughly, then season inside and out with cumin, fine salt, and rice wine. Place it in a basin for marination of about 5-6 hours.
2. Heat a wok over fire, add cooked vegetable oil until hot, place broken rock sugar into the pot, stir-fry until the rock sugar melts completely and turns a brownish red color; immediately add an appropriate amount of water to stir, making the sugar coloring sauce. All spices should be wrapped in clean muslin.(Here, honey should also be added for mixing, but for convenience, only rock sugar was used)
3. In a pot, add chicken stock, fine salt, rice wine, sugar coloring sauce, ginger (smashed), large onion (tied into knots), and spice bag; bring to a boil over high heat, then simmer on low heat for about 1 hour.Boil over high heat, then transfer the marinated duck into the pot, cook until fully cooked in the broth.
4. Remove the cooked duck from the pot and drain it. Deep fry with hot oil, spoon by spoon, until the skin becomes crispy and turns a brownish red color; then brush with corn syrup to complete. Learn to cook
