How to make Mixed Tofu with Mixed Vegetables:
1. Cut the tofu into pieces about 1 cm in size. Cut the chicken breast into equally sized pieces, mix with cooking wine and cornstarch, stir evenly, and marinate for 5 minutes.
2. Wash the zucchini, then cut it into pieces of the same size, cut the red pepper, remove the stem and seeds, and also cut it into pieces of the same size.
3. Pour oil into a pot, heat until 70% hot, then add the tofu and turn to medium heat. After frying until several sides are golden brown, remove.
4. In the remaining oil from the previous step, heat up again to 70% hot, add the chicken pieces and fry on high heat for half a minute. Once they turn white, remove.
5. Add a little more oil to the pot, then add the bean paste and stir-fry over low heat until fragrant. Add the zucchini and stir-fry for 2 minutes, followed by adding the red pepper pieces, chicken pieces, and tofu pieces. Add dark soy sauce, mix well, and thicken with water starch before serving.
