Tujia Falling Apart Burned Pancake Recipe Pancake The ingredients:Rice flour 230g, water 130g, yeast 3g, oil 10ml, sugar 5g, oil 150ml chopped green onion, garlic 10g, ginger 10g, salt 1g, prickly ash 1g, celery 1 stalk, star anise 2 pieces, cinnamon 1 piece, doubanjiang (fermented broad bean and chili paste)20g, cumin 1/4 tsp, Sichuan pepper powder 1/8 tsp,chili powder 1/4 tsp, oyster sauce 30g, ground meat 120g, garlic 20g, ginger 5g,soy sauce 5ml, rice wine 5ml,pickled Chinese cabbage 10g, salt 2g, white sesame seeds 1g, green onions 1 stalk,canned meat floss monosodium glutamate 1/8 tsp 5g,Step 1. Mix rice flour 230g, yeast 3g, sugar 5g, water 130g, and 10ml of oil. Gradually add warm water to the flour while stirring until a dough forms. Knead the dough until smooth, cover with a wet towel, and let it rise in a warm place for about 45 minutes. Step 2. Pour 150ml of oil into a small pot. Add half a green onion cut into large pieces, garlic and ginger each 10g, prickly ash 1g, celery 1 stalk, star anise 2 pieces, cinnamon 1 piece, doubanjiang 20g, cumin powder 1/4 tsp, Sichuan pepper powder 1/8 tsp, chili powder 1/4 tsp, oyster sauce 30g, and salt 1g. Chop ginger and garlic into slices, and chop celery into segments.

Step 3. Heat the oil in a small pot over low heat, adding green onion, ginger, garlic, prickly ash, celery, star anise, and cinnamon. Let the spices infuse into the oil for about 10 minutes until fragrant. Add doubanjiang and continue to simmer while stirring until the ingredients are dry.

Step 4. Prepare the spice sauce by mixing 40ml of oyster sauce in a bowl with cumin powder, Sichuan pepper powder, chili powder, and salt. Stir in 40ml of the prepared spicy oil and mix well to form the spice sauce.

Step 5. Mix ground meat with ginger and garlic, add rice wine and

soy sauce

5ml, chop the mixture further to ensure the flavor is well distributed, then add chopped pickled Chinese cabbage. Season with 10ml of the spicy oil, meat floss, sesame seeds, and monosodium glutamate, and mix thoroughly.

Step 6. Divide the risen dough into three parts and roll each part into a thin pancake about 0.3 cm thick. Use a fork to poke holes in the surface to prevent the pancake from puffing up while baking.Step 7. Spread spice sauce on the surface of the pancake, followed by meat filling. Finally, sprinkle sesame seeds and chopped green onions, then bake in an oven at upper layer, 230°C for about 10 minutes.

Divide the fermented dough into three parts.Roll each part into a thin pancake with 0.3 cm thickness. Makes small holes with a fork on the surface to prevent the pancakes from puffing up during baking.

Spread a layer of seasoning sauce on the pancake, followed by a layer of meat filling. Sprinkle some sesame seeds and chopped green onions on top.Place in the oven at upper-middle rack. Bake at 230 degrees for about 10 minutes.
