How to Make Purple Yam and Silver Ear Salad

1. Buy bagged silver ear for better quality.

2. Wash the purple yam thoroughly.

3. Soak the silver ear in cold water for 30 minutes.

4. Since there are few people, only part of the purple yam was used.

5. First, add the soaked silver ear and 2 cups of water to a soup pot and simmer.

6. After about 15 minutes, the silver ear begins to soften; then add rock sugar and continue simmering.

7. Simmer for another 5 minutes before adding the purple yam.

8. Gently stir the purple yam in a clockwise direction to prevent it from sticking to the pot.

9. After simmering for 10 more minutes, the soup is ready; turn off the heat.

11. Serve in a bowl and enjoy.

Tips:
