1. Wash one thigh chicken

10. Stir in bay leaf and kaffir lime seeds

11. Add mushrooms and stir evenly

12. Pour a large bowl of water

13. Add dark soy sauce and rice wine.

14. Add a little sugar, mix well, cover and simmer until the chicken pieces become tender

Chicken meat should be boiled in cold water to remove impurities and blood. 2, Chicken has much fat, so this time we did not use oil for stir-frying.
