Lychee, beyond the traditional dipping method in soy sauce.There are many creative ways to enjoy it, riveting lychee season is upon us in Chaoshan, so I bought some to simmer with bitter gourd.Bitter gourd, it's incredibly delicious~ paired with plain congee every morning is a great choice!Everyone can give it a try! Ingredients and Utensils for Lychee Simmered Bitter Gourd:

   Rice Floss (6 pounds)

Main Ingredients: Fresh lychees (6 pounds) Granulated sugar or rock sugar (2 pounds)
Seasonings: Bitter gourds (3 pounds)
Cooking Utensils: Non-stick pan, cooking pot

   How to Make Lychee Simmered Bitter Gourd:

Yángméi áo kǔguā
 Soak the lychees in salt water, wash them clean, and air dry.
Yángméi áo kǔguā
 Halve the bitter gourds, wash them clean, and air dry.
Yángméi áo kǔguā
 Use a spoon to remove the seeds.
Yángméi áo kǔguā
 This is a seed-free bitter gourd.
Yángméi áo kǔguā
 Cut half of the bitter gourds into two halves.

 The shape doesn't matter as long as it's not too large.

 As shown in the picture.

 Place one layer of bitter gourds in the cooking pot.

 Then add the lychees.

 Add another layer of bitter gourds (you can place the lychees at the bottom and the bitter gourds on top as per your preference).

 Finally, add granulated sugar or rock sugar.

 Bring to a boil over high heat.

 Switch to low-medium heat and simmer slowly, do not stir. Stirring would cause the seeds and flesh to separate. Continue simmering until the liquid reduces significantly, approximately four hours.
