Carrot Sponge Cake

Ingredients

150g of macaroni

Appropriate amount of oil

Appropriate amount of salt

  Chicken meat Appropriate amount

  Mushrooms Appropriate amount

Steps for preparing the macaroni

1. Rinse the macaroni and soak it in water for 30 minutes. Soak it to soften before cooking; it won't take long then.

2. Boil the water, then add the macaroni. Stir occasionally to prevent sticking to the pan.

3. Add the prepared chicken and mushroom mixture to the macaroni.(Please refer to my recipe "Chicken Braised with Dried Mushrooms" for details on the preparation of the chicken and mushrooms.)This is the end result. Ingredients

40g of salad oilMilk

  50g of granulated sugar Slight amount of vinegar

  70g of shredded carrot White vinegar 50g

Steps for preparing the sponge cake

1. Prepare the ingredients.2. Add 10g of sugar to the egg yolks and mix well.

3. Add milk and oil, then stir thoroughly.4. Sift in low-gluten flour. 5. Use a cutting cross method to gently fold and mix; do not use circular motions as they may cause the flour to become tough.

  6. Add shredded carrot. 7. Gently mix until well combined.

Whisk the egg whites to a wet foam, then add 1/3 of the remaining sugar.9. Continue whisking until medium firm peaks form; add another 1/3 of the sugar. 10. Whisk until stiff peaks are achieved, then add the final portion of sugar.

11. Beat to a consistency where lifting the whisk leaves a small peak.

12. Gently fold the egg whites into the carrot and yolk mixture using a cutting motion; avoid circular motions as they may cause deflation.

13. Mix well, then pour the batter into the mold; tap lightly to release large bubbles.

14. Bake in an oven at the second-to-last rack for 50 minutes at 140°C, then increase the temperature to 150°C and bake for another 10 minutes.

15. After baking, remove from the oven and turn out; let cool before removing from the mold.

Tips Meow says: When removing the cake by hand, gently push the cake towards the center with your hands along the sides of the pan until it detaches, then support the bottom of the mold and gently press to remove. Use the same technique for the base.

The cake may be slightly deformed after removal but will return to its original shape when shaken lightly around the edges.

Egg white foaming: Many people ask how long it takes to whip egg whites, but time is not crucial; the duration depends on the power of your electric mixer. Some might take 3-5 minutes while others may need 8-10 minutes.

Proper testing is by observing the egg white consistency: when lifting the whisk, a drooping peak indicates wet foam and is suitable for sponge roll cakes. Continue whipping until you achieve short straight peaks, which are ideal for sponge cakes.

If the mixture resembles cotton or clumps, it has been over-whipped and should be discarded.

Mix using a cutting motion, not circular motions.

Do not slow down the mixing process out of fear of deflation; nor pour in all the egg whites at once. This can lead to uneven mixing and deflation.After mixing, pour the batter into the mold, allowing it to spread evenly without creating large air bubbles. When releasing from the mold by hand, gently press around the edges of the cake towards the center.Gradually push until the cake detaches from the mold. Then support the bottom of the mold with your hands and gently push outwards; the entire cake will easily come away from the mold. When releasing the cake, it may appear slightly deformed, but don't worry; shake the sides a few times and tap lightly to return to its original shape.

Whipping egg whites: Many friends often ask how long it takes to whip egg whites. The actual time is not critical; because the duration depends on the power of the whisk, some people can do it in 3-5 minutes, while others may need 8-10 minutes. The correct method for checking is by lifting the whisk off the bowl; if the peaks formed when you lift the whisk are slightly curved, this is known as wet peaks and is suitable for makinglayer cakes like scroll cakes.Continue whipping until the peaks stand straight and short. This state of stiff peaks is ideal for making a sponge cake.;If they appear in shreds or clumps, it means over-whipping has occurred; discard these egg whites directly into the trash as they are unusable now. Mix with an up-and-down folding motion, not circular motions.

Do not worry about deflation by moving too slowly. Also, do not pour all of the whipped egg whites into the yolk mixture at once, as this can make it difficult to mix and cause deflation. Mix until the batter is uniform and in a thin layer when poured into the mold, which helps avoid large air bubbles. Tips

First, soften the vermicelli by soaking before cooking; this makes them easier to cook.
