1. Cook the fruit corn, peel it, and set aside.
2. Mix the corn kernels with cornstarch until well combined; add water if too dry. The amount of water should ensure that the mixture can form a ball.
3. Heat the pan with oil, pour in the corn kernels, spread them with your hand or a spatula to make it thin, and fry over medium-low heat on one side until done before flipping to the other side; both sides should be crispy when done. Slice and plate the pancake for serving with Milk Condensate on the table.

This is a pastry that I often order in hotels, it never gets old.Actually, it's very simple to make at home once you master the technique. In hotels, this pastry can cost anywhere from 20 yuan to over 30 yuan. But making it at home will only cost as much as two ears of corn (one for cooking and one for the oil and cornstarch), and the taste is no different; think about how economical that is! In hotels, canned corn is often used, which is more common. However, if you have fresh fruit corn at home, I recommend using it as the former does not contain preservatives and still tastes good after cooking.
2. Canned corn is also an option, commonly used in hotels. But for those with fresh fruit corn, I suggest using that; the taste is just as good without added preservatives.
The amount of cornstarch and water should be adjusted according to your needs. For canned corn, due to its moisture content, add more cornstarch but no water;if using fresh corn like me, I use 3 tablespoons of cornstarch and 15ml of water for one ear of corn. This is just a reference; the actual amount depends on factors such as the freshness and ripeness of the corn. The principle is to form a ball with the corn kernels and cornstarch.
4. When frying, ensure that the corn mixture is spread thin without overlapping; this will allow for proper mixing of the cornstarch and corn.
5. If you prefer sweetness, add some sugar while mixing in the corn mixture.
6. For a milky flavor, use whole milk or evaporated milk as a liquid substitute for water.milk or evaporated milk etc. liquid dairy products instead of water.
