Spicy Crab

The ingredients
Suzhou crab 4 pieces
Oil as needed
Salt as needed
One garlic clove
Half an onion
Dry Chili peppers 4 pieces
Doubanjiang (fermented broad bean and chili paste)
Peeled Sichuan as needed
Sugar as needed
Steps for making Spicy Crab
1. Cut the crab into pieces, fry in oil to prepare.
2. Doubanjiang and fermented broad bean paste
3. Prepare the ingredients.
4. Put a bit more oil in the pot, fry the garlic until golden, then remove and set aside.
5. Add one tablespoon of Sichuan fermented broad bean paste,fermented soybean paste mince it finely and stir-fry over medium heat to extract red oil.
6. Add the minced garlic and chili peppers together, add sugar; since both are salty, you may need to add a little salt if used in small quantities. I didn't add any salt as the salinity seemed sufficient.
7. Add the chopped onion and stir-fry until fragrant.
8. Add the fried crab pieces and stir-fry for about 3-5 minutes, then add an appropriate amount of water, cover the pot and cook over high heat. Occasionally turn them to ensure even cooking; once most of the liquid has evaporated, it can be removed from the heat.
9. Serve in a dish and enjoy.
Tips
1. Garlic is essential; its absence or lack will affect the taste.
2.The crab is already very fresh, so no need to add MSGor chicken essence, etc.
3. You can also add some other ingredients while cooking, such as potatoes,or lotus root slices, and tofu skin.Bamboo shoots, also, potato and lotus root slices need to be fried first; tofu skin and bamboo shoots should be boiled before adding. Potatoes,lotus slices, should be fried first, while tofu skin and young bamboo shoots should be boiled beforehand.
