Ingredients

  Lean meat 200g

1. Wash the lean meat and cut it into shreds.

  2. Then add some egg white, salt, sugar, shrimp roe sauce, cornstarch, and marinate for 15 minutes. 3. Prepare the ingredients (cut the wood ear mushrooms into strips, green and red peppers into shreds, chopped green onions, dried chili into small pieces, and garlic slices).

4. Heat a wok with cold oil, then add the marinated meat shreds for stir-frying.

5. Stir-fry until the meat turns white, then remove and set aside.

6. Add a little more oil to the wok, then put in the garlic slices to stir-fry until fragrant, followed by adding green and red pepper shreds.7. 12. Add a bit of shrimp roe sauce.

13. Then add the chopped green onions for stir-frying.

14. Just before removing from heat, add mature vinegar.

15. Stir-fry over high heat until well mixed, then it's ready to be served.

Tips

Due to doubanjiang being a salty ingredient, you should be careful with the amount of salt added; it may become too salty easily.

Then add the scallion segments and stir-fry together.
