How to Make Stir-Fried Shredded Pork with Sliced Pickled Cabbage

Ingredients:
Sour cabbage 250 grams Pork 150 grams (actually Five-spice pork will taste better)
Sweet potato starch 50 grams

Ginger, garlic cloves,

Steps:

1. Prepare all the ingredients.
2.Sweet potato starch should be soaked in warm water beforehand.
3. Rinse the sour cabbage and soak it in clear water.

4. Then tear off one leaf at a time, cut into strips, squeeze out the excess water.
5. Wash the pork clean and cut into strips, lightly mixed with oil.
6. Peel the ginger and garlic cloves, chop them finely.

7. Heat the wok with oil, heat it to 80% hotness before adding the chopped ginger and garlic, stir-fry on medium heat until fragrant, then add the pork strips.
8. Stir-fry until the pork changes color, then add the drained sour cabbage strips, a little cooking wine, soy sauce, and sugar, quickly stir-fry evenly.
9. Stir-fry until even, with faint sour cabbage fragrance, then add the sweet potato noodles, stir-fry for a few more times, then add an appropriate amount of water or stock, cook on medium heat until the sauce thickens.

Slightly salty and fragrant sourness, super appetizing.

The sour cabbage already has a faint salty taste, those with heavier tastes should taste it before adding more salt.

Cooking tips:
1. Sweet potato noodles need to be soaked beforehand so they can be used easily.
2. Substitute pork with five-spice pork for better flavor.
3. Add a bit more oil when stir-frying this dish because sour cabbage absorbs oil well.
4. In the final step, don't add too much water or stock; just enough to cover the ingredients will do.
