How to Make Dried Mushroom Braised Winter Bamboo Shoots


Dishes with plenty of meat and fish are being prepared for the Spring Festival table.
[]Mushrooms Slow-cooked Winter bamboo shoots are quite suitable for entertaining guests,dried mushrooms paired with winter bamboo shoots, although it is a vegetable dish, will have rich meaty flavors.
[Stewed Mushrooms and Winter Bamboo Shoots]
Ingredients:
1 rib of winter bamboo shoot, 5 dried shiitake mushrooms
Seasonings:
Green onions,ginger, cut into small pieces,soy sauce (light),1 tablespoon, dark soy sauce (two-thirds a tablespoon),brown sugar, 1 teaspoon, rock sugar 10 grams,star anise, 2 pieces,salt to taste, monosodium glutamate (MSG) to taste
Steps:
1. Soak the shiitake mushrooms in water, clean them, and drain.
2. Slice the shiitake mushrooms for later use.
3. Remove the old skin and roots from the winter bamboo shoot.
4. Cut it into slices.
5. Boil a pot of water and blanch the shiitake mushrooms and winter bamboo shoot slices in the boiling water to remove any bitter taste, then drain them.

6. Heat a wok over medium heat, add oil, and once hot, add the shiitake mushroom slices along with green onions, ginger pieces, and star anise to stir-fry until fragrant.
7. Add light soy sauce and dark soy sauce (two-thirds a tablespoon), stirring well.
8. Pour in about 1/4 cup of water, then add rock sugar.
9. Add the winter bamboo shoot slices and shiitake mushrooms to the pot, bring to a boil over high heat, then reduce to low heat and simmer for about 5 minutes until the bamboo shoots are tender.
10. Season with salt.
11. Cook over high heat to reduce the sauce until thickened, then serve.
Note:
This dish is best made using dried shiitake mushrooms, which have rich fragrance and are particularly suitable for pairing with winter bamboo shoots.
