Home Cooking Method for Fish-flavored Purple Yam

In winter, I like to eat yam.Yam, especially purple yam. Purple yam is nutritious and has a good texture; it can be cooked in various simple ways. Eating purple yam benefits the stomach and spleen, helps expel phlegm, and treats loss of appetite and weakness. In addition, purple yam contains rich minerals, with high fluoride content, which cleans teeth and prevents cavities. Purple yam fish-flavored dish is a home-style dish, appetizing to eat and beneficial for protecting teeth.

I. Ingredients 1. Main ingredients: 500 grams of purple yam, 100 grams of pork lean meat, 2 shiitake mushrooms

2. Primaries:peanut oil 6 ml, soy sauce 2 ml, salt 4 grams, cornstarch 10 grams, ginger 1 gram, red chili 1 piece, green chili 1 piece, cilantro 30 grams II. Steps 1. Heat the pan, add oil, and fry the purple yam until slightly golden, then remove from the heat. PS: A bit more oil is needed for quicker frying.

4. Remove excess fried oil and leave a little in the pan to sauté red peppers, green peppers, and shiitake mushrooms until fragrant.

5. Add lean meat and ginger and stir-fry.

6. Add the fried purple yam pieces.

7. Thicken with water starch, add soy sauce, and stir in fresh cilantro.

Three Tips:

1. Wear gloves when peeling taro to avoid allergic reactions.

2. Choose purple taro as it is fluffier and tastier.

3. Control the heat when frying the taro to achieve just-right doneness.
