As a true Chinese person, I feel incredibly fortunate to have so many delicious foods to enjoy. My love for food can only be described as a lucky reincarnation. My parents are both excellent cooks, and I, unfortunately, am only good at eating. I can cook, but my skills are very basic, but I am particularly good at making fish. I love fish so much that it's almost an obsession. I guess it's because fish is nutritious, which helps me compensate for my not-so-smart brain. So, I'd like to share some of my cooking skills with you all. I specialize in braised dishes, which are my favorite. 1. Braised fish

Ingredients:Carp 1 piece.
Seasonings: Ginger, scallions, white wine, thirteen spice, oyster sauce, white vinegar, red chili peppers, salt, pepper,soy sauce, sugar.Steps: 1. Chop the scallions finely, slice the scallion greens, mince the ginger, and cut the red chili peppers into small pieces.Cut the carp in half along the spine, then cut it into pieces. 2. Prepare the fish meat and head, add a little salt, pour in white wine, sprinkle in pepper, add a small spoonful of thirteen spice, and mix well. Marinate for 10 minutes.3. Prepare a bowl, add 2 tablespoons of soy sauce, 1 tablespoon of white vinegar, 1 tablespoon of oyster sauce, and half a tablespoon of sugar, mix well. 4. Heat the oil in a pot, place the fish skin down, and fry it until golden brown. Then flip it over and fry both sides until golden brown. Add ginger, scallion, and pour in the prepared sauce, add an appropriate amount of water, and cook until the water covers half of the fish. Cover the pot and simmer for 2 minutes.
Cook until the sauce thickens, add red chili peppers and scallion greens, cover the pot and simmer for 1 minute, and it's ready to be served!

Braised fish with abalone Main ingredients: Abalone 400g, dried chili peppers 10g Seasonings: Salt, scallions, ginger, garlic, dried chili peppers, fermented bean curd,cooking wine, sesame oil, soy sauce, green onions, sugar. Steps:

Prepare the ingredients.

Wash the abalone.Cut the abalone in half. Chop ginger, garlic, scallions, and dried chili peppers.

Marinate the abalone with salt, cooking wine, ginger, garlic, and dried chili peppers.Heat a wok over medium heat. Add the abalone and fry until golden brown. Add the chopped scallions, ginger, garlic, and dried chili peppers. Add cooking wine and stir-fry.Add the abalone and stir-fry. Add soy sauce, sesame oil, sugar, and stir-fry.
Garnish with chopped green onions and serve.

Braised pork trotters
Main ingredients: Pork trotters 400g, dried shiitake mushrooms 10g Seasonings: Salt, scallions, ginger, garlic, cooking wine, soy sauce,white pepper, sugar, cooking oil, green onions, sesame oil.Steps: Prepare the ingredients.
Wash the pork trotters.

Cut the pork trotters into pieces.

Chop ginger, garlic, scallions, and dried shiitake mushrooms.

Marinate the pork trotters with salt, cooking wine, ginger, garlic, and dried shiitake mushrooms.

Heat a wok over medium heat.
Add the pork trotters and fry until golden brown.

Add the chopped scallions, ginger, and garlic.
Add cooking wine and stir-fry.
Add soy sauce, white pepper, sugar, and cooking oil.

Garnish with chopped green onions and sesame oil, and serve.

Braised beef brisket

Main ingredients: Beef brisket 400g

Seasonings: Salt, scallions, ginger, garlic, cooking wine, soy sauce, white pepper, sugar, cooking oil,

green onions, sesame oil.

Steps:

Prepare the ingredients.

Wash the beef brisket.Cut the beef brisket into pieces. Chop ginger, garlic, scallions, and cook.

Marinate the beef brisket with salt, cooking wine, ginger, garlic, and cook.
