Homemade Hot Pot Recipe for Sauerkraut Intestines

Ingredients Main ingredients:Pig's intestine 500g, 150g of pickled mustard greens,vermicelli 80g,chili pepper 3 pieces,Sichuan pepper 5g,soy sauce as needed,coriander 2 pieces,garlic sprout 1 piece,chicken essence a little bit, rice wine and cooking wine as needed, green onion ginger as needed
Steps

1. Prepare all the ingredients.

2. Clean the intestine well, cut it into pieces, and remove the fat inside thoroughly.

3. Put the processed intestine in a pot with ginger slices, add rice wine, and boil for 5-8 minutes before draining the water.

4. In a clay pot, put in a little oil to sauté the scallions, ginger, and dried chili peppers.

5. Add the intestine and stir-fry it.

6. Pour in an appropriate amount of water.

7. Add cooking wine.

8. Cover with a lid and bring to a boil over high heat; then simmer on low heat for 20 minutes.

9. This is when you can soften the vermicelli in warm water, preparing it for later use.

10. Chop the pickled mustard greens ready for use.

11. In a wok, add oil and stir-fry the dried chili peppers and Sichuan pepper; remove them from the pot and discard.tofu chili

stir-fry the pickled mustard greens until they release their fragrance.

12. Pour the stir-fried pickled mustard greens into the clay pot.

13. Add a little soy sauce.

14. After boiling for 5-8 minutes, add the vermicelli.
15. Once the vermicelli is transparent, add a little chicken essence; sprinkle with garlic sprout and coriander, then serve.
For better taste, remove all the fat from the intestine before blanching to reduce unpleasant odors and improve texture.
The pickled mustard greens are very salty, so no additional salt is needed. Just add a little soy sauce for freshness.
