Home-style Stir-fried Bell Peppers with Pork Liver

I made pork liver. It is indeed very tender, with all family members praising it highly; it can also be considered one of my signature dishes.
Usually about half a catty of pork liver, together with some vegetables, can make a stir-fried dish for two people, which is both economical and practical. The vegetables I usually use to go with the pork liver are green pepper. or onion, adding color and taste.
After proper preparation, the pork liver is already fully cooked and extremely tender. Just stir-fry the vegetables until your desired degree of doneness, then add the prepared pork liver, sprinkle with seasonings, quickly toss and serve immediately. So this dish, once you master the technique, requires very little time but garners high praise.

Stir-Fried Liver with Colored Peppers
Ingredients: 300g pork liver
Complementary ingredients: 1/4 onion, 1 colored pepper,Sichuan peppercorns 20 grains
Marinating pork liver seasonings: 3/4 teaspoon salt,soy sauce 1 tablespoon,white pepper powder as needed, 1 tablespoon cornstarch
Cooking seasonings: 1 teaspoon salt,chicken essence.5 teaspoon, 1 tablespoon soy sauce, 1 tablespoon oyster sauce
Stir-Fried Liver with Colored Peppers recipe steps
. Pork liver cut into thin slices, marinated in (salt 3/4 teaspoon, soy sauce 1 tablespoon, white pepper powder as needed, cornstarch 1 tablespoon) for 10 minutes.. Cut the onion and colored peppers into strips.. Boil a pot of water, add the marinated pork liver, use chopsticks to scatter it, boil for about 30 seconds.
. Drain the cooked pork liver after boiling, set aside to dry.

. Pour oil into the pan, add Sichuan peppercorns and stir-fry until fragrant.
. Add onion and colored peppers, stir-fry until fragrant.

. Stir in all cooking seasonings (salt 1 teaspoon, chicken essence.5 teaspoon, soy sauce 1 tablespoon, oyster sauce 1 tablespoon).
. Quickly toss and serve immediately.

Tips for stir-fried liver with colored peppers
. The pork liver should be cut as thin as possible.

. Marinating the pork liver with starch and other seasonings before blanching helps maintain its tender texture by sealing in moisture.
. When blanching, do not cook the pork liver for too long; if cut very thinly, about 30 seconds is enough. Check inside to make sure it's fully cooked without overcooking.. The pork liver has already been cooked after blanching, so you only need to add seasonings and quickly stir-fry until well mixed before serving.
