1 cup of rice Rice Minced ginger 10g Salt 1g Granulated sugar 5g Peanut oil as needed Starch water in a small amount, chopped green onions as needed Steps 1. Beat the eggs in a bowl, wash and cut the tomato into pieces, mince the ginger and scallions, prepare salt, sugar, starch water. 2. Pour an appropriate amount of peanut oil into the pan; once hot, add the beaten eggs and cook until done, then break them into small pieces using a spatula and remove with a strainer.3. Leave some bottom oil in the pan to sauté the minced ginger and scallions. 4. Add the tomatoes and season with salt; stir-fry for two minutes to release juices.
5. Add the eggs, stir-fry until well combined.

6. Add a little sugar after stirring evenly.

7. Pour in a small amount of starch water to thicken, stir-fry until well coated.

8. Turn off the heat.

9. Press the cooked rice into a bowl and turn it out onto a plate; pour the tomato egg mixture over it for a delicious meal.

Tips

Pre-cook the rice by steaming, then pack it in a bowl and press down before inverting onto one side of the plate; drizzle with the stir-fried tomato and egg sauce. A hearty dish completed quickly for busy times.

Drizzle a little water starch to thicken the sauce, stir-fry evenly then turn off the heat.

8. Serve the rice bowl by pressing it flat, flipping and pouring it into the plate, then pour the tomato and egg stew on top for an enjoyment of deliciousness.
