Homemade Sauce Braised Duck Hearts Recipe

500g duck hearts, appropriate amount of scallion segments, fresh ginger 6 slices, 2 garlic cloves, 2 cinnamon leaves, 2 star anise pods,clove 2 pieces, aged rice wine as needed, fish sauce as needed, old soy sauce as needed, 2 small spoons of salt,MSG a little bit, 1 small handful of old ice sugar, dried chili peppers 4 pieces.
Steps

1. Prepare all the ingredients.

2. Wash and clean the duck hearts thoroughly, soak for half an hour to remove excess blood water.

3. Marinate in a bowl with 2 small spoons of salt for more than 4 hours.

4. Boil the ginger, scallions, dried chili peppers, and an appropriate amount of water.

5. Add an appropriate amount of rice wine and fish sauce to the boiling water.

6. Add an appropriate amount of old soy sauce and bring it to a boil.

7. Place the marinated duck hearts in the pot, cover and cook over high heat.

8. After boiling again for 2-3 minutes, switch to low heat.

9. Cook for another 10 minutes, then add a few pieces of old ice sugar, switch to medium heat.

10. Once melted, switch to high heat to reduce and color the sauce, sprinkle with MSG, and turn off the heat.

Tips
1. Duck hearts have a lot of blood and blood clots, so they must be washed thoroughly when cleaned; otherwise, there will be lots of bloody foam during braising.
2. The marination time can be longer for better flavor penetration.
3. After braising, if not eaten immediately, it is best to let it sit for a while before eating, as the taste will be even better.
