Auxiliary Ingredients: Scallions Ginger;Clove of Eight-angled Clove;Chinese;Cinnamon Bark;Scent Leaf;Scallion Head
Seasonings: Salt;Rice Wine;Dark Soy Sauce;Lee's Red Cooking Sauce

How to Cook Braised Pork Sholders
1 First, check the raw materials: a roughly 3-pound pork shoulder

2 Braise Pork Skin, to remove the fishy smell;remove pig hair

3 Then use steel wool to scrub;rinse with warm water.

4 Poke holes with bamboo skewers for better flavor absorption.

5 Scallions, ginger, scallion head, rice wine, dark soy sauce, salt, Chinese pepper;Star Anise marinate for two days, cover with plastic wrap and refrigerate.

6 Marinate for two days then blanch in cold water for 60 minutes.

7 Remove the pork after boiling and rinse off foam.

8 Heat a wok, add ginger slices, Star Anise, then put in the pork, adding a large spoon of Lee's Red Cooking Sauce or more if desired.

9 Add enough boiling water to cover the meat, add some sugar;and salt. Simmer for 2 hours. Then cook on high heat until the sauce is reduced.
