Fried Eggplant Boxes
"Fried Eggplant Boxes" is a traditional dish, where eggplant is cut into thick slices and slit in the middle without cutting through,"fried lotus root boxes",lotus root are made similarly, both being home-style delicacies.
Mains and side ingredients: eggplant, meat filling
Seasonings: oil, salt,MSG, oyster sauce flavoring, green onion ginger,pepper powder,flour
Steps:
1. Mix the filling ingredients: add salt, MSG, pepper powder, chopped green onion and ginger to the meat filling.
2. Mix them well.
3. Stir flour with an appropriate amount of water until it forms a sticky batter.
4. Wash the eggplant and cut it into sandwich slices.
5. Dredge each slice in dry flour first, which helps keep the filling secure.
6. Place meat filling inside, gently pressing to seal.
7. Repeat until all are done.
8. Dip an eggplant box in the batter.
9. Fry it in hot oil.10. Cook over medium heat until both sides of the eggplant box turn golden brown.
Remove and drain off excess oil on a plate. Serve immediately.
