How to make the best Hainan Chicken Rice - The simplest way to cook authentic local cuisine.
Ingredients: half a chicken, long grain rice 300G, 350ML purified water, ginger 10G, garlic 3 cloves, sea salt 10G, butter 15G, mirin 20ML, sea salt 2G, ginger 10G, cucumber 1 rib, coriander one stalk chili
sauce: red chili peppers 4 pieces, garlic 2 cloves, orange 4 pieces, sand sugar 25G, sea salt 3G, ginger 5G Sauce:
soy sauce 40ML, sand sugar 15G, sesame oil 5G Hainanese Chicken Rice recipe

1. Figure 1 -
Chicken wash and pat dry with kitchen paper. 2. Figure 2 - Mix mirin, 2G sea salt, 10G ginger in a grinder to make ginger paste.
3. Figure 3 - Squeeze out the juice from the ginger paste and mix it well with mirin and 2G sea salt.

4. Figure 4 - Apply this mixture on both sides of the chicken, gently massage for better flavor absorption; let it sit for 20 minutes.
5. Figure 1 - Weigh long grain rice for later use.

6. Figure 2 - Wash ginger and garlic, then pound them, butter and 10G sea salt are ready.

7. Figure 1 - Rinse the long grain rice, add pounded ginger, garlic, sea salt, and butter.

rice as it has been seasoned with sea salt, so mix rice well with sea salt. 9. Figure 3 - Place marinated chicken on top of the rice.

pressure cooker . 11. Figure 2 - Cover with lid, start power, set to the AH pressure cooker's standby state, select the [Cook Rice] function key, choose [Qian Tan], cooking will begin.

is done, do not open lid immediately to allow chicken rice to stay warm for another 15 minutes; this will help the rice absorb the chicken broth fully.

20. Figure 1 - After 15 minutes of warming up, use a toothpick to check if the chicken thigh is cooked through by inserting it and then pulling it out; clear broth indicates the chicken is ready.


21. Remove the chicken from the pot and place it on a plate. Discard the ginger and garlic from the rice; fluff the rice gently, cover with lid until the chicken cools enough to cut into pieces.
22. Figure 1 - Serve the cooked rice in a dish, add sliced chicken, drizzle with soy sauce, then garnish with cucumber slices and coriander. This recipe is best served with homemade chili sauce.23. Tip Use clean, oil-free spoons to take out the homemade chili sauce;

Store it in a sealed container in the refrigerator for up to 3 days if not all consumed.24. Tip The homemade chili sauce pairs well with Hainanese chicken rice and can also be used as a dipping sauce for hotpot.

Choose medium-sized chickens, I used Black-footed chickens; their size makes 25-minute cooking time perfect.

For those who like spicy food, add 1-2 small red peppers to the chili sauce for extra heat.Note: Use a clean, oil-free spoon when taking out the homemade chili sauce; store any leftovers in an airtight container and refrigerate within 3 days.
3 The chicken should not be overly large; I used black-footed chickens. Since they are not large, cooking for 25 minutes will be just right.
4 The tangerine in the chili sauce can be replaced with mandarin orange juice or lime juice.
5 This long red pepper is not very spicy; if you like it hot, you can add 1-2 pieces of chili mixed together.
