Homestyle Fish-flavored Quail Eggs Preparation




Main ingredients:Quail eggs Eggs
Side ingredients:Green beans Black Mushroom slices Red Ribbon root
Seasonings: Pixian Broad bean paste Sauce Scallions Ginger Garlic, cooking wine, fragrance Vinegar,Sugar Old soy sauce, sesame oil.
Method:
1. Boil the quail eggs until cooked, then peel and set aside.

2. Cut the green beans into one-inch segments,black mushroom soften by soaking in water, then tear into pieces,red carrot cut into strips of similar thickness as the green beans; finely chop the scallions, ginger, and garlic.

3. Heat a wok on medium heat with an appropriate amount of oil; when it reaches six-tenths hot, add in the quail eggs.

4. Fry until golden brown, then remove and drain off excess oil.

5. Remove most of the oil from the pan, leaving just enough for a light coating. Heat to five-tenths hot, add Pixian broad bean paste and stir-fry until red oil is released, then add in scallions, ginger, and garlic.

6. Pour in cooking wine, add vinegar, sugar, a little old soy sauce, and a small amount of water for seasoning.

7. Add green beans, black mushroom pieces, and carrot strips; stir-fry until fragrant.

8. Return the fried quail eggs to the pan and toss well to mix everything together.

9. Drizzle with a little sesame oil before serving.
