Home-style Steamed Seafood Shrimp Preparation

Cantonese-style frozen king prawn at home.

Ingredients:
1 king prawn (about 1500 grams), 10 grams of shrimp eggs,ginger slices, Preserved vegetable sauce, and Chaozhou mandarin orange oil. Oil as needed.
Process:
1. Soak the king prawn in ice water for 20 minutes. Pierce two spots on the head with a fork-basting needle.
2. Quickly pierce through the center of the tail, then brush and rinse the shell thoroughly to clean it.
3. Place ginger slices on the prawn's body, insert a fork-basting needle from the tail end into the head to straighten the prawn. Use a thick piece of red radish underneath to ensure even heat distribution during steaming.4. Steam in a steamer for 17 minutes until cooked, then freeze the prawn. Remove the fork-basting needle and discard the ginger slices, then freeze it again for 2 hours before removing from the freezer. Slice the prawn meat across the body opening, sprinkle with shrimp eggs, reassemble the shell and head of the prawn into its original shape on a plate, and serve with Chaozhou preserved vegetable sauce and Chaozhou mandarin orange oil.
Note: Shrimp eggs are used to garnish the sliced king prawn meat.
Note: Shrimp seeds are used to sprinkle on the deveined lobster meat for decoration.
