1. Cut the pork belly into appropriate size chunks.
2. Boil a pot of water, add the pork belly and cook until it boils. Remove from heat, rinse with cold water, and drain the water before setting aside.

3. Prepare the other ingredients.

4. Heat some oil in a wok to about five-tenths full, then add rock sugar and stir-fry over low heat until melted.

5. Add the pork belly and stir-fry evenly to coat with the caramelized sugar.

6. Pour in an appropriate amount of dark soy sauce, light soy sauce, and cooking wine, and stir-fry until the pork turns a nice color.

7. Add scallion segments, ginger slices, and dried red chili peppers.

8. Add enough warm water to cover all ingredients, then add ginger slices and star anise. Bring to a boil over high heat, then reduce to medium-low heat and simmer for 40-50 minutes.

9. When the sauce has reduced, add salt and monosodium glutamate.

10. Stir-fry evenly and continue cooking over high heat until the sauce is thickened.
