Homemade Qingyuan Scallion Picked Chicken Method

"Homeemade Version of Qingyuan Small Onion Stir-fried Chicken"

Ingredients:

Whole young hen (female) 1150 grams, red-headed green onion segments 100 grams,Coriander 20 grams, white sesame seeds(roasted) 50 grams. Seasoning Mix ①: 60 milliliters of sesame oil, sand ginger powder 30 grams, fine salt 5 grams, chicken essence 10 milliliters,MSG 8 grams, edible oil 10 milliliters.Seasoning Mix ②: 250 grams of salt, 5000 milliliters of water, MSG 15 grams. Process:1. Cut off the feet from the fatty hen and remove the lungs and crop, then wash and set aside.

2. Place Seasoning Mix ② in a stainless steel container and bring to a boil; place the fatty hen into it until fully submerged. Adjust the heat to a gentle simmer (shrimp eye) for 30 minutes, then turn off the heat and let it sit for another 15 minutes before removing.

3. Immerse the just-cooked chicken in ice water to cool quickly (for crisp skin). Once completely cooled, remove and set aside.

5. Place the chicken bones at the bottom of a serving dish, then arrange the seasoned chicken meat on top.

Separate the chicken skin, meat, and bones.Cut the chicken into pieces. Shred the chicken meat into thick strips, slice the chicken skin thinly, and chop the coriander into small pieces.

Drizzle with Seasoning ① and mix well.
