Stir-fried bitter melon, carrot, and egg pancakes recipe

My child never eats bitter melon., I, on the other hand, love it very much; eating more of it is good for one's health, at least to clear heat. To encourage my child to eat more, I came up with the idea of making a pancake from bitter melon.So I tried making a grilled pancake. And thus, this special snack was born.--Bitter Melon and Carrot Pancake,The family enjoys it so much that I now share it with everyone.Ingredients: two eggs, half a bitter melon,half a carrot, about 100 grams of flour,

one tablespoon of kudzu powder (optional, can be replaced with other starch),three green onions, and salt to taste. Makes: Bitter Melon and Carrot Pancake 1. Clean the bitter melon, remove seeds, slice thinly, then finely chop it. 2. Slice the carrot into fine strips, and chop the green onions.
3. In a large bowl, mix one tablespoon of kudzu powder with water to make a slurry, add 100 grams of flour, and stir to form a slightly thick batter.
