Steps for making fish stew:
1. Get one crucian carp, clean it, and marinate with scallions, cooking wine, garlic slices, ginger slices to remove the smell, then rinse with water gently (you can skip rinsing and directly fry if you don't like the taste of cooking wine)
2. Heat pork lard in a pot, put the fish inside and fry until both sides are golden brown, then add one large bowl of water to make broth (do not use too much oil, drain off extra oil when making broth if there is too much)

3. Clean tofu, cut into pieces

4. Put two slices of ginger in the pot, add the tofu, and simmer on low heat with fish until it turns milky white (you can add a little black pepper according to your preference)

Tips:

When frying fish, turn down the fire when the oil is hot, otherwise the skin will stick to the pan.
The oil used for frying fish can be ordinary oil or mixed with some pork lard; adding appropriate amount of pork lard makes the broth whiter and improves taste. If you add too much oil, remember to remove some of it when making broth so that the broth is not greasy.
