3. Wrap various small ingredients with gauze
4. Skim off the foam from boiling water, then rinse pigs' feet again

5. Rinse and set aside for use

6. Put oil in a pot, add rock sugar, stir-fry, don't use high heat to caramelize until it turns light brown

7. The caramelized state is ready

8. Add braised pigs' feet into the pot and stir-fry until each piece of pork is coated with caramel

9. Transfer caramel-coated pigs' feet into a soup pot, add two teaspoons of dark soy sauce, ginger, garlic, ingredient bag, lemongrass, one teaspoon of cooking wine

10. Braise the pigs' feet; there's no specific description here. Add water until it covers the pigs' feet, boil over high heat then simmer for an hour, add a little salt to taste, and continue braising for another 40 minutes.

11. Reduce the sauce

12. Serve in a bowl, drizzle with broth, sprinkle some chopped scallions; tender and mouth-watering, ready to enjoy

Tips:Pigs' feet should be cleaned thoroughly before braising, remove any remaining hair if present by roasting over the stove.

Try to add water in one go, don't rush it. The longer you braise, the more tender the pigs' feet will be. If you need to add water later, use hot water, and don't add too much salt at first as it may make the pigs' feet hard to break down.

Tip:
Clean the pig's feet thoroughly before cooking, ensuring there is no hair. If there are a few hairs, roast them on the stove to remove. Add water all at once; be patient, as longer cooking times make the dish more tender. If you need to add water mid-cooking, use boiling water. Do not add salt too early, as it can hinder the pig's feet from becoming soft and tender.
