How to Make Flavorful Eggplant

Eggplant ( )
Additional ingredients:
Sesame oil (20cc)Vinegar(10cc) Sugar (5~10cc), Korean chili paste ( )Bean paste Sauce( ) White Sesame( )
Eggplant with Flavor Steps:
1. Remove the top part of the eggplant

2. As shown, cut one eggplant into 8 pieces

3. Soak the sliced eggplants in salty water for about 15 minutes to remove bitterness

4. Drain with kitchen paper to prevent splashing when frying

5. In a non-stick pan, heat some oil and fry the skin side down first, allowing the skin to absorb oil to keep the purple color vibrant

6. Then continue frying the meaty part of the eggplant until it absorbs enough oil and becomes soft

7. Remove the fried eggplants from the pan and place them on a plate

8. Mix the seasoning ingredients well

9. Pour over the eggplants

10. Top with garnishes such as scallions,Perilla leaves, etc.

Tips:
Do not put too much oil in one go while frying; add oil gradually to prevent excessive use of oil
