How to Make Stir-Fried Squid Ribs

Stir-fried Squid Tentacles Method:
1. Wash the squid tentacles, onion, dried chili peppers, and Sichuan peppercorns, then prepare them.

2. Pour water into a pot and bring it to a boil. Add the squid tentacles and blanch until they change color, then remove from heat.

3. Remove the blanched squid tentacles, cut them, and set aside.

4. Heat a wok with oil until it reaches about seven-tenths of its capacity.

5. Add the squid tentacles and stir-fry to remove excess moisture.

6. Remove the squid tentacles from the pan and set aside.

7. Leave some bottom oil in the pot, add the dried chili peppers, Sichuan peppercorns, and fermented bean paste, then stir-fry until fragrant.

8. Add the prepared squid tentacles to the pan and stir-fry together.

9. Add the reserved onion, season with salt and chicken essence as needed, and stir-fry until the onion is cooked through before turning off the heat.

10. Serve in a dish.

Tips:
Blanching squid tentacles removes their fishy smell.
Those who do not like spicy food can add less dried chili peppers.
Fermented bean paste is salty, so adjust the salt according to taste.
