How to Make Yellow Chicken

2. Cut them into roughly equal sizes but slightly larger pieces since they will shrink after boiling.

3. Put a little water in the pot and add the cut chicken pieces, along with two spoons of cooking wine to remove any fishy smell. Boil until it's just simmering, then drain and wash them under warm water to get rid of foam.

4. Clean and slice the fresh mushrooms into slightly thick slices after removing their stems.

5. Cut the red bell peppers into pieces.

6. Slice the ginger.

7. Add a little oil to the pot, then add the rock sugar and cook over low heat until it melts.

8. Stir constantly during this process; keep stirring until the mixture forms bubbles but do not use high heat or it will burn easily.

9. Quickly transfer the chicken pieces that have been drained of water into the pot, turn up the heat and quickly stir-fry to evenly coat them with sugar color, then add two spoons of cooking wine.
