Triple Delight Spicy Hot Dragon Head Shrimp Recipe:

1. Clean chicken wings, make slashes on both sides, marinate with salt, dark soy sauce, rice wine, white pepper powder, sugar, and chicken essence for 15 minutes.Pepper powder 2. Add rice wine and a bit more water, gently simmer to enhance flavor (I did not add extra salt as I think the base is already salty enough; you can adjust according to your taste by adding some sugar for freshness). Let it reduce until almost dry before turning off the heat.

Accompanied by chicken wings and crisp lotus root slices, even more enjoyable (there are reports that you shouldn't eat the head of the dragon head shrimp as it may contain heavy metals; only the body and claws are safe).
