Cooking Tips 1. To remove the sand line: place the shrimp sideways on a cutting board with the back part facing right, use your left hand to hold it steady, slice along the middle line from head to tail with a knife, and then extract the sand line. 2. You can add a little sugar for extra freshness if you like.3. Don't overcook the winter melon; don't cut the slices too thin or thick.

4. Winter melon will release water during cooking, so no need to add water.

5. I prefer to season the ingredients separately for better taste penetration.

6. You can also add salt all at once if you prefer.
The method to remove the sand line: Place the shrimp on a cutting board with its back protruding part facing the right-hand blade, use your left hand to press down the entire shrimp, and with your right hand, make the blade parallel along the middle line of the shrimp, from the head to the back to the tail, apply even pressure, then remove the sand line. You can also add a little sugar to enhance freshness. Do not overcook the winter melon; do not slice it too thin or too thick. Winter melon will release water when cooked, so no additional water should be added. I am accustomed to adding salt in portions, allowing each ingredient to absorb the flavor.Ingredients all have their own flavors infused into them. You can add all the salt at once if you prefer, according to your personal taste.
