Red-cooked Rabbit meat Potato Stew Preparation Steps:

1. Cut rabbit meat into small pieces and soak in cold water for 2 hours.

2. Put the rabbit in a pot of cold water, add cooking wine,ginger and green onions.

3. Continue until all blood has been removed from the water, then remove the rabbit meat.Blood water

4. Cut potatoes into dice-shaped pieces.

5. Prepare chili peppers, green onion whites, Sichuan pepper, cassia seeds, garlic cloves, and star anise.

6. Heat oil in a pan to fry the potatoes until they are crispy on the outside and golden yellow; remove them as they will be more difficult to stew later.

7. In the same pan with some remaining oil, stir-fry the rabbit meat.

8. Add chili peppers, green onion whites, Sichuan pepper, garlic cloves, and star anise until the rabbit is dry; then add dark soy sauce.

9. Add soy sauce.

10. Add salt.

11. Add sugar and continue to stir-fry.

12. Add water to cover the rabbit meat and bring to a boil over high heat.

13. Reduce the amount of water to two-thirds when stewing with potatoes.

14. Cut dried chili peppers into small pieces.

15. After the potatoes are tender, add the dried chili peppers and stir-fry before serving.

16. Before serving, add monosodium glutamate (MSG) and garlic paste.
Tips:
Add hot water to the pot; using cold water will make the meat tough. Adjust the amount of dark soy sauce and soy sauce according to taste.
