The method to make tea egg

1. Wash the eggs and place them in a pot. Cover the eggs with water. Boil over high heat until it comes to a boil.

2. Boil for two minutes on medium heat, then turn off the heat and let it sit for three minutes. Then rinse with cold water until you can comfortably touch them. Remove.

3. While still hot, crack the eggs using your hand. Do this quickly. Arrange properly before placing back in the pot.

4. Measure out spices: star anise, Sichuan peppercorns, cinnamon, and tea leaves according to preference.

5. Pour enough water to cover the cracked eggs, then add the seasonings.

6. Add half a bowl of dark soy sauce and half a bowl of sugar (add more sugar if you prefer it sweeter). Add about five to six tablespoons of salt. I also added some three-part fragrance seasoning at the end.

7. Bring to a boil over high heat, then simmer for five minutes while gently turning the eggs to allow fresh air to circulate. Add chicken essence. Simmer on low heat for another ten minutes or so, turning the eggs occasionally to ensure even flavoring.

8. Turn off the heat. The aroma hits you immediately; I'm feeling very hungry now!
