1. Buy fresh green soybeans from the morning market

2. Trim both ends to facilitate flavor penetration

3. Trim all the green soybeans

4. Rinse the green soybeans

5. In a pot, add water and put in anise seeds, bay leaves, star anise, cinnamon bark; I added some dried chili peppers but you can omit them if you don't like it; also add salt and bring to a boil.

6. Boil for a few minutes then add a drop of oil (adding a drop of oil helps keep the green soybeans green).

7. Add the green soybeans, bring back to a boil, then reduce heat and simmer until they are cooked; taste test when unsure if they're done; don't overcook.

8. Remove the cooked green soybeans from the pot and let them cool down. Then soak in the cooking liquid and refrigerate to infuse with flavor. Take out before eating.
