Steps to make crispy fried small sea fish:

1. Clean the small sea fish.

2. Add salt and marinate for about 10 minutes.

3. Mix in flour and eggs.

4. Stir until well combined.

5. Heat peanut oil in a pot.

6. Fry the small sea fish when the oil is five-sixths hot.

7. Lower the heat to a slow fry.

8. Fry until golden-brown, then remove for a second frying.

9. Drain all fried pieces after first frying and re-fry in very hot oil until golden.

10. It is crispy and delicious, with a dry fragrance..
Tips:
This small sea fish has meaty flesh which is hard to fry crisp, so it must be fried twice to achieve the perfect crispiness.
