1. Prepare the materials.30 grams of egg white is basically equivalent to the weight of the egg white in one egg.Cornstarch starch I used sweet potato starch from my hometown as a substitute.Lemon juice Just squeeze it directly out of the lemon.

2. Add lemon juice to the egg whites and whip until frothy like fish eyes, then add one-third of the fine sand sugar and continue whipping.

3. When the egg whites are whipped to form a pattern when lifted with an electric mixer, add another third of the fine sand sugar and continue whipping.

4. When the egg whites are whipped to form a slight bend when lifted with an electric mixer, add another third of the fine sand sugar and continue whipping.

5. When the egg whites are whipped to form sharp corners when lifted with an electric mixer, this indicates that the egg whites have been fully whipped. Transfer the well-whipped egg whites into a piping bag.

6. Squeeze out various shapes on a baking tray lined with parchment paper; I prefer round shapes for their cuteness.

7.Oven Preheat to 100℃, bake at 100℃ for 30 minutes, then let sit for 10 minutes before removing and cooling. Peel off the dried and sealed container immediately upon cooling.

Cooking tips
I personally find that sweet potato starch and rice flour have no significant difference.Rice flour there is no difference. This version of meringue is low in sugar, using half the amount of fine sand sugar compared to a regular recipe. If you prefer a sweeter texture, you can adjust by adding more fine sand sugar. After the meringues have cooled, they must be sealed and stored in a cool place; otherwise, they may become soft and sticky. If the meringues do not easily separate after cooling, it suggests that they are not fully baked. Suggest re-baking if necessary.
