How to Make Scallion Pancakes

Tips:

1. The dough should be relatively soft, with a moisture content of about 60%. Alternatively, you can use hot water to make the dough.

2. You can also cook them in a flat pan; they will turn golden brown when fully cooked. Do not overcook as the skin is thin and usually takes about 3 minutes.
