How to Make Dry-Fried Chestnut Shiitake Mushrooms

1. It tastes better when torn by hand rather than sliced.

2. Make sure to dry out the moisture first, this speeds up stir-frying.

3. After Sichuan pepper kernels are fragrant, you can remove them if you don't want to bite into them; I skipped this step for convenience.

6. Add the chestnut mesquite mushrooms and stir-fry over high heat until slightly charred.

7. Switch to low heat and add some soy sauce and a little dark soy sauce to color it.

A small tip:
1. Slicing the chestnut mesquite mushrooms by hand is better for taste than cutting them with a knife.2. Make sure to dry off any moisture beforehand, as this will help it char quickly while stir-frying.3. You can remove the after they have fried to prevent biting into them, though I was lazy and didn't do so.
