Method for making sautéed tender meat slices with mushrooms
1. Cut the lean meat into a lump;

2. Slice the meat thinly, then mix with black pepper, cooking wine, oyster sauce, cornstarch and water, and knead for about 1 minute.

3. Heat oil until it is hot, then lower the heat to small fire, add the meat slices separately into the oil and stir-fry with a spoon.

4. When the meat turns white, remove them from the pot;

6. Cook until the mushroom slices soften and release their juice, then add the sliced green chilies.

7. Pour in cooking wine and stir-fry evenly before removing from heat and sprinkling with chili peppers.
